Beetbox Smoothie

A vibrant and earthy drink made with beets as the star ingredient. Beets are known for their high content of fiber, folate, and antioxidants, particularly betalains, which are good for inflammation and heart health. This smoothie is an excellent way to incorporate these health benefits into your diet in a tasty, easy-to-drink form.

Ingredients

Maroon Layer:

  • 1/2 banana
  • 1 small raw beet (peeled)
  • 1 cup frozen rasberries and blackberries
  • 1/2 cup plant milk
  • 1/2 tsp grated fresh ginger
  • 1-2 Tbsp honey

White layer:

  • 1 banana
  • 1 cup ice
  • 1/2 cup plant milk
  • 1 heaping Tbsp tahini or nut butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 Tbsp of honey

Directions

  • Put all ingredients for maroon layer in blender and blend until smooth. Set aside.
  • Put all ingredients for white layer in blender and blend until smooth.
  • Layer maroon and white mixtures into glass.
  • Enjoy!

**Add liquid to desired thickness to adjust for IDDSI Level 3 (Moderately Thick)

**Can substitute any milk, nut-milk or plant-based milks for liquid.
